Roast, rest, repeat.

Ember is the house roast from an independent coffee roastery, built around a declining heat curve and a short development phase. Whole beans are sourced from a single estate in Huila, Colombia, washed and sun-dried, then roasted in split lots of 12 kg to keep colour even. The profile sits medium-dark, with a dry finish of dark cocoa, charred orange, and toasted sugar.

Best used from day seven after roast, across filter, immersion, or espresso. Dose 15–18 g per 250 ml water, grind medium, and brew at 92–95 °C for a balanced cup. The 250 g format is designed to be finished within three weeks of opening, before the oils become heavy.

Orders are packed in nitrogen-flushed matte black film with a one-way valve and dispatched from our roastery within two working days. Unopened bags can be returned in original packaging within 14 days of delivery; roasted coffee is not restocked. International shipping is available with fees calculated at enquiry.

Care

Use as intended. Store away from direct heat and follow the care notes included with your order.

  • Declining heat curve — Each batch follows an 11-minute profile with a short development phase after first crack.
  • Split-lot sorting — Green beans are graded by screen size and density before roasting to reduce scorching and tipping.
  • Nitrogen-flushed pack — Whole beans are sealed in matte black film with a one-way valve to limit oxygen contact.
  • Roast reference printed — Every bag carries lot code, roast date, and the curve reference for that batch.
Questions

Good to know

How should I store Ember beans?

Keep the bag sealed at room temperature, away from heat and direct light. Use within six weeks of the roast date for the clearest cup.

What grind size works best?

Start with a medium grind for filter, fine for espresso, and coarse for French press. Adjust by taste rather than by timer.

When do you roast?

We roast in split lots every Tuesday and Thursday. Orders placed before 10:00 ship within two working days.

Can I return coffee?

Unopened bags in original packaging can be returned within 14 days of delivery. Opened or roasted coffee cannot be restocked.

Do you ship internationally?

Yes. Orders dispatch from our roastery in Lisbon, with transit times and fees confirmed at enquiry.
