Ember
Our point of view

The long curve of heat

Ember began with a simple refusal: to roast for colour alone. Our head roaster works from a declining heat curve, dropping batch temperature at the first sign of second crack, then resting beans for seven days. The result is a roast with a narrow band of development: dark enough to carry cocoa, light enough to keep the fruit. No smoke, no shine, no shortcut. Just time, fire, and a very quiet room.

How it is made

Considered in every detail

The choices behind the object, from material to the last mile.

01 / Declining

Declining heat curve

Each batch follows an 11-minute profile with a short development phase after first crack.

02 / Split-lot

Split-lot sorting

Green beans are graded by screen size and density before roasting to reduce scorching and tipping.

03 / Nitrogen-flushed

Nitrogen-flushed pack

Whole beans are sealed in matte black film with a one-way valve to limit oxygen contact.

04 / Roast

Roast reference printed

Every bag carries lot code, roast date, and the curve reference for that batch.

Questions

Good to know

How should I store Ember beans?

Keep the bag sealed at room temperature, away from heat and direct light. Use within six weeks of the roast date for the clearest cup.

What grind size works best?

Start with a medium grind for filter, fine for espresso, and coarse for French press. Adjust by taste rather than by timer.

When do you roast?

We roast in split lots every Tuesday and Thursday. Orders placed before 10:00 ship within two working days.

Can I return coffee?

Unopened bags in original packaging can be returned within 14 days of delivery. Opened or roasted coffee cannot be restocked.

Do you ship internationally?

Yes. Orders dispatch from our roastery in Lisbon, with transit times and fees confirmed at enquiry.
